Anyone know of an example where Cassandra is being used with the JPAEventStore API?

I know the question has popped up more often, which you can quite simply search for in the search box of the user group.
The following posts might be interesting for you given your request:

Additionally, my colleague Greg recently published a blog on AxonIQ website on why you’d look into a specialized Event Store, also covering why Cassandra isn’t a perfect fit here.
Regardless, if you still want to use Cassandra for this, I know of this GitHub repository trying it out.
I’d however reconsider this idea to be honest.
